Quinoa Tabbouleh

 

Quinoa Tabbouleh

Serves 6-8 as a side or 3-4 as a main

INGREDIENTS:

1 tsp coconut oil or garlic infused olive oil

2 x 250g packets of pre-cooked quinoa or approx 250g of dried quinoa (cooked &cooled)

1 red pepper

1 orange pepper

1 large vine tomato

10cm cucumber

3 tbsp fresh chives, chopped

2 tbsp fresh parsley, chopped

2 tbsp fresh coriander, chopped

2 tsp cumin

1 tsp hot smoked paprika

Juice of 1 large lemon

Salt & pepper (to taste)

25g feta (optional)

METHOD:

  • Melt the coconut oil in a pan over a medium heat
  • Finely dice the peppers and add to the pan, fry for 5 minutes until softened
  • Remove the pan from the heat
  • Stir in the fresh herbs, paprika, cumin, lemon juice, salt, pepper and cooked quinoa
  • Remove the seeds from the tomato and finely dice, then add to the pan
  • Peel the cucumber and remove from the seeds, then add to the pan and combine all the ingredients
  • Chop the feta and sprinkle over the tabbouleh, chill before serving

I have been fan of quinoa dishes for as long as I can remember, especially tabbouleh! I love how fresh quinoa tabbouleh tastes with the addition of vine tomatoes and crunchy cucumber. This can be eaten as a main with the addition of a protein source (such a tofu, salmon or chicken) but also makes the perfect side dish alongside other dishes, including my tahini coleslaw and courgette tamari salad!
