Almond and Coconut Energy Balls

I created these almond and coconut energy balls in about five minutes when I was waiting for my dad to pick me up. I honestly did not expect them to taste this good! They taste best when made with salted almond butter as it gives them a delicious fudgy, salted caramel flavour!

With just four ingredients these energy ball recipe could not be any simpler! They are quick to make, gluten free, dairy free and refined sugar free. You can’t get much better than that in my opinion! Unfortunately not everyone following the low FODMAP lifestyle can tolerate dates but if, like myself, you can tolerate them in small quantites then I definitely recommend giving this speedy recipe a go. I took them into work to give to my favourite taste testers and they went down really well!

Makes 15 energy balls

200g pitted medjool dates

100g smooth almond butter (use one with salt in, or add a pinch to the recipe)

25g desiccated coconut

½ tsp vanilla extract

METHOD:

  • Pulse all the ingredients together in a blender or food processor until combined (the mixture should stick together between your fingers)
  • Break off small pieces of the mixture, approximately 20g, and roll it between your hands to form a ball shape
  • Place the energy balls in the fridge for at least 30 minutes to set
  • Store them in an airtight container, preferably in the fridge as they taste amazing cold and it gives them a really fudgy texture!
