Berry overnight oats (or bircher muesli) are a great alternative to porridge. It can also be made in big batches to last you through the week!
Oats are an amazing source of fibre and slow release energy as they are low on the glycemic index so won’t spike your blood sugar. I find that when I start the day with a big bowl of oats it stops me from snacking and overeating.
INGREDIENTS:
45g gluten free oats
150ml almond milk
1 tbsp berry based superfood powder
½ tbsp chia seed protein powder (or chia seeds)
50g frozen blueberries
Any toppings of your choice!
METHOD:
- In a bowl, mix together the oats, almond milk, berry powder, chia seeds and blueberries
- Cover and leave in the fridge for a few hours or overnight
- When ready cover the oats with any toppings of your choice, I used peanut butter, banana, dessicated coconut and a raw snack bar!
