INGREDIENTS:

45g gluten free porridge oats

100ml unsweetened almond milk

80g frozen blueberries

1 tbsp dessicated coconut

1 tsp maca powder

1 banana, sliced

METHOD:

  • Mix together the oats, almond milk, 50g of the blueberries, maca powder and half of the coconut and leave in the fridge for a few hours or preferably overnight
  • Top with the sliced banana and the rest of the blueberries and coconut, then enjoy!

These blueberry and overnight oats are a really convenient breakfast, they can be made the night before and ready in minutes or taken in a jar to work! You can make a big batch to last a few days and top with something different everyday. If you crush the blueberries a bit when they have defrosted it turns the whole thing bright purple!
