I’ve got quite a few chocolatey energy and protein bite recipes on my blog and in my ebook as they are a great way to curb chocolate cravings without overindulging. They are also SO simple to make! This recipe is low FODMAP, gluten free, vegan and refined sugar free and it was actually a last minute creation when I was craving chocolate but my oven had just exploded!

I love to use cacao protein powder in this type of recipe but you could easily substitute it for coffee or mocha protein (be careful of vegan protein powder ingredients as some brands aren’t low FODMAP!)

Makes 18

INGREDIENTS

2 tbsp Superroot chia seeds

6 tbsp unsweetened almond milk

2 scoops That Protein vegan brown rice cacao protein powder (50g)

20g cacao powder

50g ground almonds

30g buckwheat flour

10g Superroot cacao nibs

75ml maple syrup

40g melted coconut oil

1 tsp vanilla extract

METHOD

  • Combine the chia seeds and the almond milk in a small bowl, leaving them to sit for 5 minutes so most of the liquid is absorbed
  • Combine the protein powder, cacao, ground almonds, buckwheat flour and cacao nibs in a bowl
  • When the chia seeds are ready add them to the dry ingredients along with all the remaining ingredients
  • Mix everything together with a spoon until a batter is formed
  • Cover a plate with greaseproof paper then roll the mixture into ball shapes between your hands then place them on the plate
  • Place the plate in the fridge for an hour to allow the protein bites to set
  • Store in the fridge for best results
