Chocolate & Lime Truffle Squares

Lime might not be your first choice of flavour to add to chocolate but trust me it’s one worth trying. My favourite flavour chocolate is orange so when a friend suggested I tried adding a different citrus fruit, lime, I knew it was going to taste incredible!

These no-bake truffle squares are so easy to make and really don’t take as long to prepare as you would expect. They are gluten free, low FODMAP, refined sugar free, vegan and so delicious! Who said free-from food had to be boring?! The whole point of my blog is to prove this wrong and I think this recipe defies that perfectly! You can’t get much more indulgent that raw cookie dough topped with chocolate truffle and a crunchy chocolate layer.

Makes 12

INGREDIENTS

 

For the base:

50g melted coconut oil

50g smooth almond butter

45ml maple syrup

135g gluten free oats

65g rice flour

For the truffle layer:

130g melted coconut oil (soft but not melted)

5 tbsp full-fat coconut milk (from a can)

30g cacao powder

60ml maple syrup

Zest & juice of 1 lime

For the topping:

40g melted coconut oil

35g cacao powder

Zest of 1 lime

30ml maple syrup

2 tbsp cacao nibs

METHOD

  • Start by adding the oats to your blender then blend them until they have reached a flour consistency
  • Mix all the ingredients for the base together in a bowl
  • Line a 7×7 inch square brownie tin with greaseproof paper before firmly pressing the base mixture into the tin with your hands
  • Place the base in the freezer while you prepare the truffle layer
  • Add all the ingredients for the truffle layer to your blender and pulse 3-4 times until the mixture is thick and smooth
  • Remove the base layer from the freezer then pour over the truffle mixture
  • Place the tray back in the freezer for 20 minutes to set
  • To make the top layer, mix together the coconut oil, cacao powder, maple syrup and lime zest until smooth
  • Remove the tray from the freezer, pour over the chocolate then sprinkle on the cacao nibs
  • Place the tray in the fridge for 10-15 minutes before cutting into squares
  • Store in the fridge for best results
