Chocolate Peanut Butter Protein Cookies

chocolate peanut butter protein cookiesINGREDIENTS:

100g smooth peanut butter (runny is best!)

3 tbsp maple syrup

2 tbsp melted coconut oil

2 tbsp almond milk

1 tsp vanilla extract

1 scoop (25g) vegan chocolate protein powder (alternatively 1 tbsp extra each of cacao powder and oat flour)

2 tbsp cacao powder

75g oat flour

25g cacao nibs or dairy free, refined sugar free chocolate

METHOD:

  • Preheat the oven to 150oc and line a baking tray
  • Whisk together the almond milk, coconut oil, peanut butter, vanilla extract and maple syrup
  • Add the oat flour, cacao powder, protein powder and chocolate or cacao nibs and mix together until a dough forms
  • Shape in 6 cookies approximately 1cm in thickness (if the mixture is a bit too sticky then leave it a few minutes before handling as the oat flour will soak up any liquid!)
  • Bake in the oven for 12 minutes
  • Leave to cool before storing (or eat them hot straight away like me!)

Chocolate peanut butter protein cookies! I love chocolate so I am always trying to find new healthy versions of my favourite chocolatey things! I added the vegan protein powder to this recipe for an extra nutritional boost but they are just as tasty with the extra cacao and oat flour. It’s hard to belive these little cookies are gluten free, refined sugar free, dairy free and low fodmap!
