Chocolate protein pancakes

Makes approx 6 pancakes

INGREDIENTS:

1 tsp coconut oil

1 egg

1 banana

2 tbsp unsweetened almond milk

½ tbsp cacao powder

25g vegan chocolate protein powder

30g oat flour

½ tsp vanilla extract (optional)

1/2 tsp baking powder 

Unsweetened almond milk (add a tbsp at a time if the mixture seems dry)

1 tbsp cacao nibs (optional)

Optional toppings:

Dessicated coconut 

Fresh berries

Nut butter

Cacao nibs

METHOD:

  • Heat ½ of the coconut oil in a pan over a medium heat
  • In a food processor add the egg, banana, protein powder, cacao powder, oat flour, vanilla extract and baking powder until completely combined
  • Add the cacao nibs if using and pulse until evenly distributed
  • Drop spoonfuls of the mixture into the pan (I use 1/8th of a cup to measure) and fry on each side for 2-3 minutes until cooked through
  • Serve the pancakes warm with your choice of toppings

These chocolate protein pancakes are the perfect breakfast for chocoholics! I love chocolate and pancakes so wanted to come up with a clean and healthy recipe that combined both of these things. They are naturally low FODMAP, coeliac friendly, dairy free, refined sugar free and high protein! To make things even better they are freezable and taste great when reheated if you are after a quick breakfast for children.
