Serves 4-5 as a side dish
INGREDIENTS:
2-3 medium courgettes
20g pumpkin seeds
2 tbsp tamari
1.5 tbsp sesame oil
1 tbsp cider vinegar
Pinch of chilli flakes
½ tsp maple syrup
METHOD:
- Preheat the oven to 180oc
- Mix the pumpkin seeds together with ½ tbsp of the sesame oil and 1 tbsp of the tamari
- Bake the pumpkin seeds for 5-7 minutes and leave to cool
- Peel the courgettes into thin strips and spread out in a bowl
- Whisk together the remaining tamari and sesame oil with the cider vinegar, chilli flakes and maple syrup
- Drizzle the dressing over the courgette strips and mix together
- Sprinkle the pumpkin seeds over the courgette strips and chill before serving
I created this courgette and tamari salad recipe as a last minute addition to a family feast. I wanted a dish with an asian twist so came up with something that used tamari and sesame oil. You will find that courgettes are used a lot in my recipes, it is such a versatile ingredient that absorbs any any flavours it is paired with. I love the addition of roasted pumpkin seeds to this dish as it adds a much needed crunchy texture!
