Creamy vanilla zoats! I love porridge for any meal of the day especially when I’m tired and it’s cold outside so I’m always looking for new flavour combinations. I’ve heard a lot about zoats so decided to try them and they did not disappoint! I decided to use vanilla and banana to sweeten the porridge and add a little bit of vegan protein powder for a nutritional boost.

INGREDIENTS:

45g gluten free oats

1 banana

250ml unsweetened almond milk

1 tbsp vegan protein powder (optional)

1 tsp vanilla extract

50g courgette

Optional toppings:

1 tbsp hemp seeds

1 tbsp peanut butter

2 tbsp granola

METHOD:

  • Add the almond milk, oats, protein powder and vanilla into a saucepan over a medium heat
  • Mash half of the banana and grate the courgette then add both to the saucepan
  • Stir continuously for 3-4 minutes to ensure the oats are really creamy, stop when the mixture starts to thicken
  • Top with the rest of the banana, sliced, and any other toppings of your choice
