Serves 1

INGREDIENTS:

1 small sweet potato (100-150g)

15g rocket

150g tofu

70g broccoli

60g tinned chickpeas

1 small courgette

1 tsp hot smoked paprika

1 tsp olive oil or coconut oil

½ tsp turmeric

1 tbsp tamari

Pinch of chilli flakes

Dressing:

1 tbsp tahini

Juice of ½ a lemon

1 tsp cumin

1 tbsp water

METHOD:

  • Preheat the oven to 200oc and line 1 or 2 baking trays
  • Chop the tofu into 1 inch cubes and place in a bowl with the tamari, mix together and leave to marinate
  • Peel the sweet potato and chop into wedges, combine in a bowl with the paprika and oil
  • Drain the chickpeas and combine in a bowl with the turmeric
  • Chop the broccoli into 1 inch florets
  • Roast the sweet potato wedges for 5 minutes before adding the broccoli, tofu and chickpeas
  • Continue to roast for another 15-20 minutes until the sweet potato has softened
  • While they are roasting spiralise the courgette and combine in a bowl with the vinegar and chilli flakes
  • To make the dressing whisk all the ingredients together
  • Serve in a bowl with the rocket and the tahini dressing drizzled over

Sometimes all you need is a big bowl of goodness! I came up with this goodness bowl with turmeric baked chickpeas recipe when i was trying to use up leftover veg and it ended up tasting amazing, it makes the perfect clean meal especially after overindulging. It involves a few more steps than some of my other recipes but it’s worth it because it’s so simple and delicious! If you want to add meat to this its really tasty with some stir fried chicken breast!
