Lemon, Chilli and Herb Marinated Tofu
Serves 2
INGREDIENTS:
½ tsp coconut oil
300g firm tofu
Juice of 2 lemons
1 tbsp fresh chives, chopped
½ tbsp dried mixed herbs
½ – 1 tsp hot chilli flakes (depends how much you like spice!)
Pinch of salt
METHOD:
- Turn the tofu on its side and cut in half lengthways, then cut each half into 4 triangles (as shown in the photo)
- Whisk together the lemon juice, chives, herbs, chilli flakes and salt then pour it over the tofu steaks and mix gently
- Leave to marinate for at least 10 minutes
- Heat the coconut oil in a pan over a medium heat, fry the tofu steaks for 2-3 minutes on each side until cooked through
These lemon, chilli and herb marinated tofu steaks make the perfect side dish alternative to meat, it pairs really well with my roasted veg quinoa salad! If you are a meat-eater this marinade also tastes delicious when used with chicken, turkey or salmon. It’s also naturally gluten free and low fodmap! Until recently I had only had tofu in Asian-based dishes but now I love with anything, it is such a versatile ingredient that soaks up the flavour of any marinade you use!
