Serves 1
INGREDIENTS:
100g gluten free pasta
100g turkey breast, in 1 inch strips
2 tsp garlic infused olive oil (or melted coconut oil)
1 red chilli
½ tsp hot smoked paprika
1 tsp tamari
30g sundried tomatoes, rinsed, drained and chopped
2 vine tomatoes, cut into 8
½ courgette, in half moons
50g broccoli, in medium florets
½ red pepper, in 1 inch pieces
½ tbsp dried mixed herbs
1 tbsp fresh chives, chopped
1 tbsp fresh basil, chopped
METHOD:
- Preheat the oven to 200oc and line a baking tray
- Place the tomato pieces on the tray and roast for 10 minutes
- Mix the broccoli, courgette and pepper with 1 tsp of the oil and the dried herbs, add to the baking tray and roast for a further 15-20 minutes until cooked
- While the veg is in the oven, cook the pasta as per instructions and drain
- Melt the remaining oil in a pan over a medium heat, add the turkey breast and fry 2 minutes until the outside is no longer pink
- Add the chilli, chives, sundried tomatoes, paprika and tamari then fry for a further 3-4 minutes until the turkey is cooked through
- Once everything is cooked stir it all together with the fresh basil before serving
This pasta with turkey and roast veg is the perfect healthy comfort food dish that required minimal effort. It is naturally gluten free, dairy free and low fodmap! I love roasting tomatoes as it adds a rich tomato flavour to pasta without the labour of making a tomato sauce making perfect for mid-week meals! I used turkey to this dish to add protein but if you prefer not to use it, it is delicious without or replaced by tofu. I use tamari in a lot of my recipes as it provides a delicious savoury flavour to anything without needing to add salt or stock (which is often high fodmap). It may sound strange adding it to a pasta dish but I definitely recommend it!
