If you are looking for an affordable, speedy soup recipe then I can’t recommend this pea and mint soup enough! It can be ready to serve in 15 minutes and tastes so fresh and delicious. I love using mint in my cooking as it’s so refreshing and amazing for digestion. I added the potato to make the soup a bit more filling, you can also add a scoop of unflavoured vegan protein powder to the blender for an even more nutritious meal!
Serves 4
INGREDIENTS:
½ tbsp garlic infused olive oil (or coconut oil)
1 stick of celery
200g potato, peeled
1 tbsp dried mixed herbs
700g frozen peas
8 fresh mint leaves
1 handful of spinach
1 litre of boiling water
1.5 tbsp tamari
Juice of 1 lemon
Pinch of black pepper
METHOD:
- Heat the oil in a deep pan over a medium heat
- Dice the celery and potato into 1 inch pieces, add to the pan with the dried herbs and fry for 2 minutes
- Add the water, cover and bring to the boil
- Reduce to a simmer and cook for 6-8 minutes until the potato has softened
- Add the peas and spinach then simmer for a further 3-4 minutes
- Remove from the heat then stir in the tamari, lemon, mint leaves and pepper
- Blend until smooth, taste and add more mint leaves if required
- Serve topped with more fresh mint leaves
