Raw cookies are so delicious! Like these purple raw sandwich cookies they can be really similar to energy bites but in a more indulgent form. By adding a berry based super food powder you end up with a beautiful purple raw cookie that is high in antioxidants and vitamins providing a great energy boost. These are so tasty I had to try not to eat the whole lot at once!
Makes approx 10 sandwich cookies
INGREDIENTS:
3 tbsp pink superfood powder (I used Indigo Herbs super vital powder)
4 tbsp chia protein powder (or chia seeds)
100g ground almonds
110g gluten free oat flour
6 tbsp maple syrup
5 tbsp coconut oil, melted
Filling:
60g cacao butter (or coconut oil)
3 tbsp pink superfood powder
2 tbsp maple syrup
4 tbsp tahini
METHOD:
- To make the cookies combine all the ingredients in a bowl
- Roll little pieces of the mixture between your hands then flatten into little cookie shapes
- Leave in the fridge for 10-15 minutes until the coconut oil has set (I placed clingfilm between the cookies and the plate as they can stick before they have set)
- Next make the filling, melt the cacao butter or oil in a bowl over a pan of lightly simmering water
- Remove from the heat and whisk in the other ingredients
- Once cooled, place the mixture in the fridge for 5-10 minutes or until it is thick but spreadable
- Spread the filling between two raw cookies
- Best stored at room temperature
