Makes 6-8 cookies
INGREDIENTS:
60g gluten free oat flour
3 tbsp smooth peanut butter
3 tbsp maple syrup
2 tsp maca powder
25g ground almonds or sesame flour
1 tbsp melted coconut oil
20g vegan, refined sugar free chocolate
METHOD:
- Mix the peanut butter, maple syrup and coconut oil together until combined
- Chop the chocolate and add to the wet ingredients along with the other ingredients
- Form a dough with your hands and divide into bite size cookie shapes
- Leave to set for an hour before enjoying (the taste good straight away if you can’t wait!)
I created these raw chocolate chip cookies by accident when i was trying to come up with a new cookie recipe but they were so good raw I decided to keep them this way. You can mess around with the flavour by swapping the chocolate for raisins or cacao nibs.
