Serves 2
INGREDIENTS:
1 tsp coconut oil
200g sweet potato, diced into 1 inch pieces
1 large red pepper, chopped into 1 inch pieces
2 tbsp chopped fresh herbs, i used chives
6 eggs, whisked
120g chopped feta
1 tsp ground turmeric
½ – 1 tsp hot chilli flakes
Salt & pepper
40g rocket
Dressing:
½ tsp smoked paprika
2 tsp cider vinegar
METHOD:
- Preheat the grill to a medium heat
- Heat the coconut oil in a pan over a medium heat
- Add the sweet potato and red pepper and fry for 5 minutes
- Add the turmeric, chilli flakes, salt, pepper and herbs and fry for another 5-10 minutes until the sweet potato starts to soften
- Sprinkle over the chopped feta, mix slightly then pour over the eggs making sure the pan is completely covered
- Cook on the hob for 5 minutes
- Place under the grill for approximately 5 minutes, flip and cook for 5 minutes on the other side
- Mix the paprika with the cider vinegar and pour over the rocket before serving
Sweet potato and feta frittata! I used to hate the idea of omelettes and frittatas until i realised that they could taste amazing if you add the right things to them! This is a perfect low-fodmap high protein dish for after a workout and i love the addition of the tangy dressed rocket on the side, it is also delicious with a steamed broccoli!
