Serves 5-6 as a side dish
INGREDIENTS:
¼ medium red cabbage
2 large courgettes
2 medium carrots, peeled
3 tbsp fresh chives, chopped
2 tbsp tahini
1 tbsp olive oil
Juice of 1 lemon
1 tbsp of water
1 ½ tsp cumin
Pinch of salt
METHOD:
- Finely slice the red cabbage and place in the bowl
- Peel the carrots and courgettes using a julienne peeler, cut the strips into 2 inch pieces
- Add to the bowl with the cabbage and sprinkle over 2 tbsp of the chives
- To make the dressing whisk together the tahini, oil, lemon, cumin and salt
- If the dressing is too thick add the water 1 tsp at a time until it makes a smooth sauce
- Pour the dressing over the vegetables and mix together
- Sprinkle the rest of the chives over the top
- Store in the fridge until serving
I love this healthy alternative to coleslaw with pretty much anything! Tahini coleslaw can be used as a side dish, in a burger or as a main salad. I have never been a fan of mayonnaise but I have tested the tahini based replacement on mayonnaise fans and it been really popular!
