Stir fries are one of my favourite mid-week meals as they are so quick and easy to prepare but never short of flavour! I normally use chicken, turkey or tofu in this type of dish so I decided to marinate some salmon to use instead and it tasted amazing. The longer you marinate the salmon the better it tastes so you could even prepare it in the morning before work so it is ready to be fried in minutes when you get home.

I used courgetti in this recipe because is the perfect low carb alternative to noodles resulting in a nutritious, low carb, high protein meal. Adding the egg isn’t essential to the dish but it gives it an extra boost of protein, perfect for a post workout dinner. I always opt for low carb meals on rest days or when I have spent the day recipe testing, especially when testing cake recipes as I always end up eating so much of them. It’s all about balance!

INGREDIENTS:

1 tbsp garlic infused olive oil

1 large salmon fillet

50g broccoli

½ red pepper

1 large courgette

1 red chilli

2 tbsp fresh chives, chopped

1 egg

1 tsp cider vinegar

1 tbsp tamari

1 tsp brown rice miso

1 tsp maple syrup

½ tsp fresh ginger, grated

¼ tsp cayenne pepper

Juice of ½ a lemon

Optional extras to garnish:

Fresh coriander

Sesame seeds

METHOD:

  • Start by preparing the marinade by mixing together 1 tsp of the garlic oil, the tamari, miso, syrup, ginger, cayenne and lemon
  • Place the salmon fillet on a small plate and coat with 1 tbsp of the marinade, cover and place in the fridge for at least an hour
  • When the salmon is ready to cook start preparing the vegetables
  • Spiralize the courgette into a bowl and combine with the cider vinegar
  • Heat half of the garlic oil in a frying pan over a medium heat
  • Finely chop the chilli, cut the pepper into strips and the broccoli into small and add to the pan, fry for 4-5 minutes until the broccoli has softened
  • Heat the rest of the oil in another pan on a medium heat and fry the salmon for 2-3 minutes on each side until browned and cooked through
  • When the veg has softened, stir in the rest of the marinade
  • Move the veg to one side of the pan then whisk the egg and pour it into the other side of the pan
  • Scramble the egg until cooked and stir into the veg
  • Remove the pan from the heat and quickly mix in the courgetti
  • Serve topped with the salmon then sprinkle over the coriander and sesame seeds, if using
