Turkey and Courgetti Bolognese

This turkey and courgetti bolognese is not your traditional bolognese recipe as it uses turkey mince and doesn’t contain garlic or onion but by using low fodmap alternatives it definitely is not missing out on flavour! I love adding chives and other fresh herbs to my low fodmap dishes as they can transform any dish.

I add tamari to a lot of my recipes as it adds a delicious savoury flavour to any dish without needing any stock which can often contain onion and garlic powder.

This turkey bolognese also works well with pasta or poured over sweet potato wedges!

Serves 2-3

INGREDIENTS:

1 tbsp garlic infused olive oil (or coconut oil)

450g turkey mince

1 red pepper

1 red chilli (optional)

400g tinned tomatoes

4 tbsp tomato puree

1 tbsp dried mixed herbs

2 tbsp fresh chives, chopped

1 tsp cayenne pepper

2 tbsp fresh basil, chopped

2-3 large courgettes

2 tsp cider vinegar

2 tsp tamari

1 small carrot, grated

2 tbsp parmesan (optional)

METHOD:

  • Start by heating the oil in a pan over a medium heat
  • Add the turkey mince to the pan and fry for 4-5 minutes until the mince is no longer pink
  • While the mince is cooking, finely dice the chilli and cut the pepper into 1cm pieces
  • Add the chilli, pepper, tomatoes, tomato puree, dried herbs, chives and cayenne to the pan
  • Cover and bring to the boil then reduce to a simmer and cook for 10 minutes, check regularly so it doesn’t stick
  • While the bolognese is cooking, spiralise the courgettes and leave in a bowl with the cider vinegar stirred through
  • Uncover the pan, add the grated carrot and cook for a further 4-5 minutes until the sauce has thickened
  • Stir through the tamari and basil before serving over the courgetti
  • Sprinkle over the parmesan if using
