I was hoping for the texture of shortbread when I was making these gluten free, refined sugar free, low FODMAP cookies and they turned out perfectly! I haven’t eaten shortbread for years and these perfectly light cookies definitely hit the spot. I am obsessed with Indigo Herbs turmeric powder at the moment, not only does it taste amazing but it also has endless health benefits. I think it goes perfectly with the lemon zest in this recipe and gives the cookies a beautiful yellow colour. The chocolate coating is completely optional but if you’re a chocoholic like me then definitely give it a try!

Makes 12 cookies

INGREDIENTS:

100g gluten free oats

100g rice flour

2 tsp Indigo Herbs ground turmeric

120g coconut oil (soft, not melted)

Zest of 1 large lemon

60ml maple syrup

For the chocolate (optional):

30g Indigo Herbs cacao butter or coconut oil

3 tbsp Indigo Herbs cacao powder

2 tbsp maple syrup

½ tbsp cacao nibs

METHOD:

  • Preheat the oven to 150oc and line a tray with baking paper
  • Pulse the gluten free oats in a blender or food processor until they reach a flour-like consistency
  • Tip the oat flour into a bowl along with the rice flour and turmeric, mix slightly so the turmeric is evenly dispersed
  • Add the remaining ingredients to the bowl and stir with a spatula until and soft dough is formed
  • Break fo pieces of the dough and roll it into balls between your hands
  • Place on the tray and press down slightly to form a small cookie shape
  • Bake the cookies for 20 minutes
  • Leave them to cool on the tray for 10 minutes before moving them onto a cooling rack until completelyl cooled
  • To make the chocolate coating (if using) melt the cacao butter or coconut oil in a bowl over a pan of simmering water
  • Remove the bowl from the heat before stirring in the cacao powder and maple syrup
  • Leave the chocolate to thicken for a few minutes so it’s easier to coat the cookies
  • Cover a plate with cling film (this stops the chocolate sticking) then dip the bottom of the cookies in the chocolate before placing them on the plate
  • Drizzle the remaining chocolate over the cookies and sprinkle on some cacao nibs if you like!
